Torta di Pasta
Torta di Pasta (from Everyday Italian)
2 eggs
½ cup milk
1 cup grated parmesan, more for serving
2 cups cooked pasta with sauce of your choice (leftovers!)
salt and pepper to taste
In a large bowl, mix all the ingredients together. Over medium heat, in a large, non-stick skillet, heat about ¼ cup olive oil. Giada calls for ½ cup, but I thought it was way too much, so ¼ cup it was and I’m sure a few tbsp would do (if your skillet’s non-stick coating isn’t too old…). Pour the pasta into the pan and cook for about 10 minutes, or until the pasta is golden and crunchy enough for you. Invert a plate onto the pie and flip carefully. Slide the pie back into the pan and cook for about another ten minutes. Serve with extra parmesan cheese.
